Morning Weight: 140.7 lbs
I'm expecting my monthly friend so I'm not sure if my body is all wacky from that. I certainly hope so because I don't see why I'd fluctuate so much right now.
breakfast: eggs with smoked salmon and a little bit cream cheese
lunch: smashburger grilled chicken sandwich with no bun
snack: mini cheesecake bites
dinner: smashburger grilled chicken imitation in heart lettuce and sliced tomatoes. Found a blog that imitated the smashburger chicken so I attempted it. This is basically what she said...
Smashburger Imitation Chicken
- Start pounding relatively hard, but be careful not to split the chicken. You want to pound them until there about 1/4 inch thick.
- Once the chicken breasts are pounded thin, lay them out on a large plate, careful not to overlap.
- Drizzle some olive oil over the top, and be sure they’re coated.
- On the first side, sprinkle about 1/8 tsp of each of salt, oregano, and basil. Sprinkle just a touch of garlic powder over the top and finish off with some black pepper.
- Flip the breasts over, and again be sure they’re coated with olive oil. Sprinkle about 1/8 tsp of salt, oregano, and basil, but this time, forgo the garlic powder. Top off with some black pepper.
- On each of the buns, spread a small amount of margarine on each side. These will be grilled along with the chicken.
- Grill the chicken on medium high heat for about 3-5 minutes on each side, checking often.
I barely coated in olive oil and only added a tiny pinch of salt on one side. I also used the garlic powder on both sides because I love garlic! It was a bit overcooked (my fault) but I liked it. Nice flavor. Nothing like smashburger's grilled chicken but probably healthier.
