Morning Weight: 139.8 lbs
lunch: We went to costco and they always have samples on the weekend. Usually they're ok but today they had some goodies. 5 different types of sausages and some yakisoba. yogurt protein smoothie and deli meats. yum.
dinner: Had to cook some old salmon marinated with lemon. Made a sauce: non-fat greek yogurt, lemon, dash of horseradish, dash of mustard, oregano. (could have done without the horseradish)
I made some more mini cheesecake bites. I really liked this last time because it was great for those sugar cravings. I also like to top with a little bit of sugar-free strawberry jello. Obviously you cannot eat a lot so maybe these handy little bitesized ones are too risky. Next time I'll try the cupcake sized one so that I know that I'm only allowed one!
Dukan Friendly Cheesecake
Ingredients:
8 oz. Fat free cream cheese
1 Tbsp. Fat free sour cream (I've never put this in but you can play with it for texture)
1 egg 1/4 C Splenda or stevia (or to taste)
Splash of vanilla
Splash of lemon juice
Directions: Beat until smooth. Spray mini cupcake pan and pour in batter. Bake at 350 for 15-20 minutes or until set. You can remove a little early since it'll bake some more after you pull it out of the oven. Put in the fridge when done. Top with sugar-free strawberry jello for added boost. I made a double batch and threw in about half tsp of lemon zest for a lemony flavor. I also upped the sugar a little since the lemon juice was a little overpowering. Make sure you taste it a little before baking!!
