Today I tried to make a microwave chocolate cake. I know it's not going to be like real cake but it wasn't as bad as I thought.
2 Tbsp oat bran
2 Tbsp skim milk powder
1 Tbsp unsweetened cocoa powder
1 tsp baking powder
Sweetener to taste (I used 2 tsp)
1 egg
3-4 Tbsp skim milk
Directions:
1) Beat the egg and skim milk in a very large mug (note that the batter rises a lot during the cooking process). I used a large measuring cup and it almost spilled (i panicked and stopped it for a little bit)
2) Add the oat bran, milk powder, cocoa powder, baking powder, and
sweetener; mix very well. (It should be quite liquid. If necessary, add
another tsp of milk.)
3) Microwave for 3 minutes on high.
It was dry and bland but it kind of had the texture of cake and tasted a little chocolatey. The bottom was a bit overcooked and it wasn't very sweet. I also had a rough lingering feeling on my tongue like after I eat too much spinach. I'm not expecting delicious desserts during this diet so I guess it'll do. =)
